Warning!!! You need to make the dough at least 2 hours before baking these cookies. Plan accordingly!!!
- 1/2 C Vegetable Oil
- 4 1 oz Unsweetened Chocolate Squares
- 2 Cups Sugar
- 4 Eggs
- 2 tsp. Vanilla
- 2 tsp. Baking Powder
- 2 1/2 Cups All-Purpose Flour
- 1/2 tsp Salt
- 1 Cup Powdered Sugar
- Combine Small amount of oil and chocolate and melt in the microwave.
- Add to a larger bowl with the rest of the oil and sugar.
- Add eggs one at a time beating well after each addition. Add vanilla.
- Sift together flour, baking powder, and salt. Add to chocolate mixture and blend thoroughly.
- Chill at least 2 hours or overnight.
After refrigeration:
- Preheat oven to 350 degrees.
- Spread powdered sugar in a small flat pie pan. Shape dough into 1 inch balls and drop into the sugar pan and coat thoroughly.
- Place 2 inches apart on greased cookie sheet. Bake 8-10 minutes until the center of the cookies is not wet (can be fudgy though).
Makes 3 1/2-4 Dozen Cookies
