Funeral Potatoes



Let's be honest, these are the yummiest comfort food EVER.


  • 2 Lbs Frozen Hash Browns
  • 1 Tsp Salt
  • 1/2 Tsp Pepper
  • 1/2 Cup Chopped Onion
  • 1 Can Cream of Chicken Soup or 2 C Sour Cream (I prefer cream of chicken soup)
  • 2 Cups Cheese
  • 1/2 C melted butter


Topping options- Choose one:

  • 2 cups corn flakes crushed mixed with 1/4 C melted butter
  • More shredded cheese. 



  1. Combine all ingredients and mix well and pour into buttered casserole dish 9x13. 
  2. Bake 45 min at 350 degrees

Alfredo Sauce


While on my mission, my Sister from Another Mother, DM and her husband made this yummy homemade Alfredo sauce for one of our dinner appointments. Best part? It is also gluten free! It makes for approx 2 - 4 people, depending on how much sauce people like


  • 1 Quart Heavy Whipping Cream
  • 1 Tbsp Butter/Margarine
  • 1/4 Cup (overflowing!) Grated Parmesan Cheese
  • 1/4 Cup (overflowing!) Grated Romano Cheese (the cows milk one is better, the goats milk tends to be very strong!)
  • 1 Tsp Garlic (fresh minced, or powder) add more to taste if desired
  • 1/2 Tsp Nutmeg
  • 1 Egg Yolk 
  • Salt and Pepper to taste

  1. Melt butter in pan over low - med heat, slowly stir in cream when butter is halfway melted.
  2. Then slowly whisked in the nutmeg, salt, pepper, garlic, yolk, and cheese. 
  3. Bring to a boil, stirring frequently to keep it from scorching.  Keep stirring while at a boil for approx 2 - 3 minutes to melt cheese well.  
  4. Turn temp to low and stir frequently until you are ready to eat.  Usually cooking 20 minutes or more helps to ensure it is smooth and not grainy from the cheese.
